Ostomate Recipe: Chicken with Parma Ham and Mozzarella

This recipe is an absolute favourite of mine. Not too sure if it’s because it’s slightly salty but I could eat this every day and be happy.
This dish contains tomatoes and spinach. My stoma has never had an issue but I make sure I chew well and take my time eating the dish.
This dish is pretty easy and quick to cook but does require a rolling pin and some cling film.
This dish serves one so just increase the amounts to cater to those who you are cooking for.
Ingredients
1 x chicken breast
300 g of cherry tomatoes
30-50 g of spinach
3 cloves of garlic or 1 teaspoon of easy garlic
2-3 tsp of dried sage
Salt and pepper to season
2 slices of parma ham
30 g of grated mozzarella
1 tbsp of coconut oil
Method
- – Wrap the chicken in cling film and beat until about 1cm thick
- – Melt half of the coconut oil in a griddle pan and cook the chicken for 5 minutes once seasoned with the sage, on each side, slice the chicken to make sure it’s cooked and place onto a plate and keep it covered
- – Add the other half of the coconut oil to the pan, lower the heat and add the tomatoes, then the garlic and spinach and cook until spinach has wilted, take off the heat, place the chicken back on top of the salad
- – Add the parma ham and mozzarella cheese and place under the grill until the cheese has melted.
- – Add to plate and serve
